Here is the easiest soup recipe if you missed it before - NOW is the time to get the fresh young shoots of nettles before they get tough and stringy. Although they are rather like a fashionable 'Pick and come again' salad - so new shoots keep on popping up if you cut them back!
And look out for wild garlic just popping up in shadey places - the young leaves make a great garnish for your soup.
