Making blackberry vodka is a great way to use blackberries if they are a little off their prime.

This is an easy recipe and the quantity depends on the amount of fruit you can harvest.

The proportions are roughly: 3 cups of alcohol, to 2 cups of fruit to 1 cup of sugar. 

  1. place the fruit in large sterilised jars, with a neck wide enough you can get the fruit out at the end.
  2. Pour alcohol over them
  3. Add castor sugar.
  4. Shake vigorously and shake it whenever you remember over the next few months.
  5. Store in a dark place for 2 or 3 months. 
  6. strain out the fruit - keeping the liquid, decant into pretty bottles.

That's it - and they make yummy Christmas presents too.
