Here is the easiest recipe in the world courtesy  of my 9 year old daughter – she makes them perfectly every time, all by herself – yes even the first one which I always used to mess up!

The batter doesn’t need to sit and rest before using.

My only tip is to wipe the pan with a lot of butter using kitchen paper and when you go for the toss – really GO FOR IT!

Makes 6.


4oz plain flour

90ml water

200ml milk

2 eggs

Pinch of salt

Butter for the pan


  1. Sieve the flour and salt into a mixing bowl.
  2. Mix the milk and water together
  3. Make a well in the middle of the flour and salt.
  4. Break the eggs in to the well and whisk – using a normal hand held balloon whisk.
  5. While whisking add the water and milk slowly.
  6. Keep whisking till smooth.
  7. Then cook and enjoy!
